red velvet cookies

Merry Christmas!! I have been absent from the blog world for quite some time! I finally have some down time to relax and share with you all one of my favorite holiday baking recipes! Here is one of my favorites...

RED VELVET COOKIES


These are perfect for holiday parties and sooo yummy!

Here is what you need:
1 Box of Red Velvet Cake Mix
1 Cup Flour
1 Egg
2 Sticks of Butter (I use a low fat alternative, but it's up to you)
1 Cup of White Chocolate Chips

Mix your Cake Mix and Flour in a large mixing bowl.  Add 1 egg and 2 sticks of soft butter.  Then mix in the White Chocolate Chips.

This will give you red velvet cookie dough.  Roll the dough into 1 inch balls.
Cook for 10 minutes at 350 degrees.

(Make sure you do not cook longer than 10 minutes! If cooked appropriately then you will get soft cookies for days.  I feel like most store bought cookie dough cookies NEVER stay soft!)

Let the cookies cool for 5 minutes before transferring to cooling rack.

End of Summer Fun

Earlier in the week Anthony got to be apart of the GQ Bombay Sapphire bartender challenge.  Anthony works part time at Parlay Social, and has bartended for years, so he can get pretty creative with his beverages.

I turned 25.  It am so happy that I have such great friends/boyfriend! They truly made my birthday so much fun!  I would be lost without Anthony, he really does keep me sane! My sister, and friends are the best a girl could ask for!

p.s. I no longer recommend Shhakespeare & Co. after their TERRIBLE serivce on my birthday, I regret ever saying good things about this place. I love the interior, but the service/staff/and food don't live up to expectations.  Even for a new restaurant, waiting 45 minutes between apps and entree is ridiculous! They server didn't even apologize.  Anyway, I will be interested in seeing how the restaurant turns out in the next 6 months or so.

washington weekend

The boyfriend and I decided we needed a weekend out of Lexington. So we decided to head to Washington DC.  We both had been to DC multiple times when we were younger. It had actually been close to 10 years since either of us had been.  So we decided to head to the city and explore as adults!  And I am so glad we did!

We brought our brand new rides to DC to give us a quick, convient, and healthy way to explore.
It was so much fun to bike all day around DC and Georgetown. 




Day 2 in DC, we decided to put our bikes aside and explore the city on foot. We wanted to visit all the free museums and leaving our pricey bikes tied up outside wasn't reassuring.





DC Nightlife is interesting. If you know anything about DC, you know, most people don't live in DC.  They live in Virginia or Maryland and commute to the city.  Actually found one of the best restuartants was actually connected to our hotel.  We stay at the corner of F&7thNW street, just a two short blocks from the Mall.




What I found quite intersting is how many people, friends around Lexington.  Had never been to Washington DC.  I mean, reallllly? Don't you think it's important to witness where the decision that affect your future are made?? Where 30%+ of your paycheck is going? I mean really?

Get it together people and go visit the capitol of our country as an adult.  It really will open your eyes!

shakespeare and co.

I am in love!
I love Shakespeare & Co. in downtown Lexington! The restaurant sets at the corner and Broadway and Short.  I have been to Shakespere for lunch or dinner or just cocktails 4 times in the last week! FOUR!!! I think that says something.

They offer breakfast, lunch, and dinner. And just incase you want those eggs benedict at dinner, they offer their whole menu anytime of the day.

As for food recommendations...
the smoked salmondd salad & sandwich are BOTH delicious, but I am a HUGE fan of smoked salmon.
Also, the Goat Cheese and Blue Cheese pizzas are to die for.
And don't worry the pricing is great!

My new favorite place in Lexington! :)

hilton head island- a gilley-trisler wedding

I have been lucky enough to become friends with Miss Amanda Gilley, who would then get engaged to Adam Trisler. Mr. & Mrs. tied the knot April 21st in Hilton Head. I love love LOVE this place! After setting it traffic for two hours (on 1-75)...and many hours later we finally arrived in Carolina bliss.
